Garlic Butter Mayo Grilled Cheese (Printable)

Crispy sourdough with garlic mayo and melted cheddar-mozzarella, offering a rich and light flavor combination.

# What You Need:

→ Bread

01 - 4 slices sourdough bread

→ Cheese

02 - 4 slices sharp cheddar cheese
03 - 2 slices mozzarella cheese (optional)

→ Garlic Mayo Spread

04 - 3 tablespoons mayonnaise
05 - 1 large garlic clove, finely minced or grated
06 - 1 teaspoon fresh parsley, finely chopped (optional)
07 - 1/4 teaspoon black pepper

→ For Assembly

08 - 1 tablespoon Dijon mustard (optional)

# How to Make It:

01 - In a small bowl, mix mayonnaise, minced garlic, parsley, and black pepper thoroughly to create the garlic mayo spread.
02 - Lay out sourdough slices. Optionally spread Dijon mustard on the inside of two slices. Layer 2 cheddar slices and 1 mozzarella slice (if using) between two bread slices to form sandwiches.
03 - Evenly coat the outside surfaces of each sandwich’s bread slices with the prepared garlic mayo spread.
04 - Preheat a nonstick skillet or griddle over medium-low heat.
05 - Place sandwiches in the skillet and cook for 3 to 4 minutes per side, pressing gently with a spatula until bread is golden and crisp and cheese is melted.
06 - Remove sandwiches from heat, let rest for 1 minute, then slice and serve immediately while hot.

# Expert Advice:

01 -
  • The garlic mayo creates edges so crispy they practically shatter, without any of the heavy butter feeling.
  • It's faster than traditional grilled cheese and uses ingredients you probably already have hiding in your fridge.
  • The sourdough tang plays perfectly against sharp cheddar and that savory garlic punch.
02 -
  • Don't skip the medium-low heat; high heat will burn your bread before your cheese even thinks about melting.
  • The garlic mayo needs to be spread thin but even, because thick spots will brown too fast and thin spots won't crisp up.
03 -
  • Make your garlic mayo the night before and store it covered in the fridge; the flavors meld and the garlic mellows slightly, which is actually better.
  • If your skillet isn't nonstick, a light coating of neutral oil in addition to the mayo spread prevents sticking without adding grease.
