  • Batter: 2 large eggs, 2 large egg yolks, 75 g (1/3 cup) granulated sugar, 1 tsp pure vanilla extract, 30 g (1/4 cup) all-purpose flour, 1/4 tsp fine sea salt
  • For Serving (optional): Powdered sugar for dusting, Fresh berries, Vanilla ice cream or whipped cream

Instructions

Step 1:
Preheat the oven to 220°C (425°F). Generously butter four 6-oz (180 ml) ramekins and dust with cocoa powder or flour, tapping out the excess.
Step 2:
In a heatproof bowl set over a pan of simmering water (double boiler), melt the chocolate and butter together, stirring until smooth. Remove from heat and let cool slightly.
Step 3:
In a medium bowl, whisk together eggs, egg yolks, sugar, and vanilla until pale and thickened, about 2 minutes.
Step 4:
Pour the melted chocolate mixture into the egg mixture and whisk to combine.
Step 5:
Sift in the flour and salt. Fold gently until just incorporated do not overmix.
Step 6:
Evenly divide the batter among the prepared ramekins, filling each about 3/4 full.
Step 7:
Place ramekins on a baking sheet and bake for 11 13 minutes until the edges are set but the centers are still soft and slightly jiggly.
Step 8:
Let cakes cool for 1 minute. Run a thin knife around the edges to loosen. Invert onto dessert plates or serve in the ramekins.
Step 9:
Dust with powdered sugar and serve immediately optionally with berries and a scoop of vanilla ice cream or whipped cream.
