# What You Need:

→ Oats Base

01 - 1 cup old-fashioned rolled oats
02 - 1 cup milk, dairy or unsweetened plant-based
03 - 1/2 cup plain Greek yogurt or dairy-free yogurt
04 - 2 tablespoons cream cheese, softened
05 - 2 tablespoons maple syrup or honey
06 - 1/2 teaspoon pure vanilla extract
07 - Pinch of salt

12 - 2 tablespoons chopped pecans or walnuts, optional

# How to Make It:

01 - In a medium bowl, whisk together oats, milk, Greek yogurt, cream cheese, maple syrup, vanilla extract, and salt until creamy and well combined.
02 - In a separate small bowl, toss diced strawberries with lemon juice and 1 teaspoon maple syrup.
03 - Layer the oat mixture and strawberry mixture in two jars or containers by alternating: begin with half the oats, then spoon half the strawberries on top, repeat with remaining oats and strawberries.
04 - Cover tightly and refrigerate overnight or at least 6 hours to allow oats to soften and flavors to meld.
05 - Just before serving, top each jar with crushed graham crackers and additional strawberries. Sprinkle with chopped nuts if desired.

# Expert Advice:

01 -
  • It tastes like cheesecake but won't leave you in a sugar crash by mid-morning.
  • You literally just whisk and layer, then let time do the work while you sleep.
  • It's the rare make-ahead breakfast that actually gets better sitting in the fridge overnight.
02 -
  • The cream cheese needs to be softened or it won't mix smoothly and you'll end up with little clumps throughout—take it out of the fridge while you gather the other ingredients.
  • Don't add the graham crackers until you're actually eating it, or they'll turn into sad, soggy crumbs instead of staying that crucial crunch.
03 -
  • Soften your cream cheese for exactly the amount of time it takes you to measure out the other ingredients—it'll be perfect by the time you're ready to whisk.
  • The lemon juice in the strawberry layer is non-negotiable if you want that cheesecake brightness; don't skip it thinking it won't matter.
