This classic meatloaf recipe has been a family favorite for years, always bringing everyone together at the dinner table.

Ingredients

  • For the Meatloaf: 1 ½ lbs (680 g) ground beef (80/20 blend recommended), ½ lb (225 g) ground pork, 1 cup (100 g) breadcrumbs, 1 medium onion finely chopped, 2 cloves garlic minced, 2 large eggs, ½ cup (120 ml) whole milk, 3 tbsp ketchup, 2 tsp Worcestershire sauce, 1 tsp dried thyme, 1 tsp salt, ½ tsp black pepper
  • For the Meatloaf Glaze: ⅓ cup (80 ml) ketchup, 2 tbsp brown sugar, 1 tbsp Dijon mustard
  • For the Mashed Potatoes: 2 lbs (900 g) russet potatoes peeled and cut into chunks, 4 tbsp (60 g) unsalted butter, ½ cup (120 ml) whole milk warmed, ¼ cup (60 ml) heavy cream warmed, salt and white pepper to taste

Instructions

Step 1:
Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.
Step 2:
In a large bowl combine ground beef ground pork breadcrumbs onion garlic eggs milk ketchup Worcestershire sauce thyme salt and pepper. Mix gently until just combined do not overwork.
Step 3:
Shape the mixture into a loaf and place in the prepared loaf pan.
Step 4:
In a small bowl mix ketchup brown sugar and Dijon mustard for the glaze. Spread half the glaze over the meatloaf.
Step 5:
Bake the meatloaf for 45 minutes. Remove from oven spread the remaining glaze on top and return to oven for another 20 25 minutes or until internal temperature reaches 160°F (71°C).
Step 6:
While the meatloaf bakes place potatoes in a large pot and cover with cold salted water. Bring to a boil reduce heat and simmer until fork-tender 15 20 minutes.
Step 7:
Drain the potatoes and return to the pot. Add butter warm milk and cream. Mash until smooth and creamy. Season with salt and white pepper to taste.
Step 8:
Let the meatloaf rest for 10 minutes before slicing. Serve with mashed potatoes.

How to Make It

Step 01
