  • Cherry tomatoes: 200 g (7 oz), whole
  • Olive oil: 3 tbsp
  • Dried oregano: 1 tsp
  • Smoked paprika: 1 tsp
  • Garlic powder: 1/2 tsp
  • Salt: 1/2 tsp
  • Black pepper: 1/4 tsp
  • Fresh parsley: Chopped, for garnish
  • Lemon wedges: Optional, for serving

Instructions

Prepare oven:
Preheat oven to 220°C (425°F). Line a large sheet pan with parchment paper.
Mix ingredients:
In a large bowl, combine sausages (or tofu) and all chopped vegetables.
Season:
Drizzle with olive oil, sprinkle with oregano, smoked paprika, garlic powder, salt, and pepper. Toss until evenly coated.
Arrange and roast:
Spread mixture evenly over pan in a single layer. Roast 25–30 minutes, stirring halfway, until veggies are tender and sausage/tofu is cooked through.
Finish and serve:

How to Make It
