  • Marinade & Sauce: 3 tablespoons olive oil, Juice and zest of 1 large lemon, 4 garlic cloves, minced, 1 teaspoon dried oregano, 1 teaspoon dried thyme, 1 teaspoon salt, ½ teaspoon freshly ground black pepper, ½ teaspoon paprika
  • Garnish (optional): Fresh parsley, chopped, Lemon wedges

Instructions

Preheat oven:
Preheat oven to 200°C (400°F).
Prepare marinade:
In a small bowl, whisk together olive oil, lemon juice and zest, minced garlic, oregano, thyme, salt, pepper, and paprika.
Prepare chicken:
Place chicken breasts between two sheets of parchment paper and gently pound to even thickness (about 2 cm).
Arrange on baking sheet:
Arrange chicken breasts on one side of a large, rimmed baking sheet. Spoon half the marinade over the chicken and rub to coat.
Prepare vegetables:
On the other side of the baking sheet, spread the asparagus and red onion. Drizzle with remaining marinade and toss to coat.
Bake:
Bake for 20–25 minutes, or until chicken is cooked through (internal temperature 74°C/165°F) and asparagus is tender.
Broil (optional):
If desired, broil for an additional 2–3 minutes for extra color.
Serve:
Transfer to plates, garnish with chopped parsley and lemon wedges. Serve immediately.
